I think we should create a list of recommendations for movies with the best surround sound. I would propose two categories, kids and older viewers. I'll start with a few staples:
Jurassic Park; Star Wars episode 2; King Kong (the 2006 version); Batman Returns
Aeon Flux; V for Vendetta; The Matrix
My absolute favorite movies to watch in these catagories:
2) Pirates of the Caribben (it might not be good for surround - but cannons are COOL!)

The surround sound on all of these movies is great! These are mainly movies for adults, although some might have a PG-13 rating.
Titanic - dialog from the front speakers while the sea washes by on the rear speakers.
The Perfect Storm - high seas and thunder from all corners of the room
U-571 - torpedoes zip along from front left to rear left
Saving Private Ryan - shells and bullets coming from all over the room. You feel like you're on the beach
All under "older viewers":
Master and Commander for the water sound effects as well as the cannons, The Fifth Element, of course, Batman Begins (the scarecrow voice effect), The Ultimate James Bond series. Many more...
I wanted to mention the one that I always break out to demo surround sound to my friends Contact.
There are several scenes in this movies where you have tons of audio coming out of all the speakers. Especially the scene where Ellie gets dropped in the container, and then travels through the tube. The visuals and audio are both stunning.
Other movies I like to demo surround sound with are The Matrix, The Day After Tomorrow, Titan AE, X-Men and battle scenes from Lord of the Rings.

OK - going through my collection right now and here are some more of my favorite adult movies for a good surround sound system:
2) Gone in 60 seconds (Nick Cage version)
3) Jurasic Park
4) Pearl Harbor (the first half)
5) Spiderman ???

Great suggestions everyone. I would have to agree with every movie listed so far. I will say that for a great, yet subtle surround effect, try M. Night Shamalan's "Signs". When Mel Gibson is in the cornfield and the alien critters are scurrying all around, it sends shivers up my spine. The dog barking in the distance always gets my boxer's attention.
I also like the Kill Bill volume 1 scene where Uma Thurman and Lucy Liu are fighting in the snow covered garden. The crunch of snow under thier feet and the repetitive clunk of the bamboo fountain is pretty sweet.
Jmiah22:I think Lord of the Rings (All three) would qualify for amazing surround sound! Well, the Platinum Extended version would anyway. It is DTS ES 6.1 surround sound. It sounds AMAZING!! You have things flying at you from all four corners of the room in the battle scenes.
I have to agree. I'm no animal buff but the impact of those enormous elephants, or mastodons...whatever they are, just amazing.
Another good one is Underworld. It has a very clean, and powerful 5.1 soundtrack, and some of the best use of bass I have heard in a movie.
I'm going to have to buy Underworld now and watch it (I'm always looking for an excuse to buy new movies)
Black Hawk Down
My DVD is from a few years ago so there may be a special edition but it's in 5.1 and upconverted to 6.1 by my Sony receiver it sounds pretty good. In fact on the cover it mentions that it won the 2001 Academy award for sound.
