I just bought a 4ohm DVC 250W RMS Infinity 10" sub and a 2-channel Kicker ZX250.5 that outputs at minimum of 4ohms and 250W in bridged mode. Looking at Crutchfield's subwoofer wiring diagrams, it appears that the bridged wiring option results in an 8ohm load on the amp:
Would this harm the amp?
Another option might be to connect both my rear speakers (which nominal impedence of 4ohm) and subwoofer as outlined in the amp, manual, though I'm not sure how much it would affect the power available to my sub. Here's the manual for my amp:

Honestly, those two components are not going to work together well (if at all). If you purchased that amp solely for your sub, I would return it if possible, or get a different sub. If you have aftermarket speakers that can handle 75W each, then you could use it to power them, or get a sub that is rated for about 250W RMS, and can be wired to 4ohms. (A SVC 4ohm sub, or a DVC 2ohm sub will work.)
Keeping your sub, you can wire the voice coils to give you 8ohms overall (series wiring, like your post) or 2ohms overall (parallel wiring). Wiring a sub to 8ohms in usually not a good practice, as an amplifier's output depends on the impedance of the attached components. Wiring it at 8ohms will not necessarily hurt it, but power output drops dramatically with higher impedances. For example, my sub amp will put out 1200W @ 1ohm, 600W @ 2ohms, or 300W @ 4ohms, and very little at 8ohms.
That said, you are looking for an amplifier that is rated for about 250W RMS x 1 @ 2ohms. If you would like to stick with a Kicker amp, the ZX300.1 would fit the bill nicely (albeit a little over the 250W rating of your sub.)
